Chicken and Sausage Skillet

There never seems to be enough time in the day for everything that needs to be done.  Cooking is something I love doing, but sometimes I just need something that tastes good, that my whole family will like, and that is good for them. But most importantly something that I can make on the fly.  This is something that I came up with to try and satisfy my family especially my harshest critics (my picky eaters).  It was a hit with them so now I'm sharing it with you.




1lb boneless skinless chicken thighs
1lb smoked sausage (sliced)
1  14.5 oz can diced tomatoes
1  12oz bag of frozen green peas
1  12oz bag of frozen corn
5  cups of chicken stock
1 1/2 cups of uncooked brown rice
2  Tbl  olive oil

Brown chicken in skillet for five minutes on each side.  Set aside a plate.  Combine chicken stock and rice, bring to a boil.  Add tomatoes, peas, corn, and sausage.  Season with salt and pepper.  Let simmer for twenty minutes, add chicken.  Continue to cook until almost all of  liquid is gone and rice is fluffy.  About thirty minutes.  Serve hot.
